Tasty Tuesday: Easy-Peasy Mac & Cheesy! (Add Some Bacon If You Please-y)

Hey guys! So today I will be talking about a super easy recipe for our fav comfort food: Macaroni and Cheese! It’s a great homemade alternative to boxed mac and cheese. It’s literally so easy that you will be asking yourself why you ever bought Kraft’s Mac and Cheese. Want to eat clean? Make it organic. Healthier? Add some veggies on top. Ya got toddlers? Sneak some puréed veggies in there like butternut squash or cauliflower. There’s so many ways to spin this classic.

Easy-Peasy Mac & Cheesy:

Serves: 2
Prep time: 10 minutes
Cook time: 20 minutes
Meal type: lunch, side dish


  • 1 cup of elbow macaroni
  • 2 tbsp unsalted organic butter
  • 2 tbsp organic flour (or gluten free flour)
  • 1/2- 3/4 cup of organic milk (whole or semi-skimmed)
  • 1/2 cup shredded organic cheddar cheese
  • 1/8 tsp nutmeg
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • Salt to taste
  • Fresh cracked pepper
  • Optional: crispy bacon pieces for garnishing
  • Toddlers: cooked and puréed cauliflower or butternut squash (amount is at your discretion)


  1. Boil macaroni in water, stir to make sure that it doesn’t stick to the bottom of the pot. For adults, keep the pasta al dente (slightly uncooked). For children, cook it well until it is very soft.
  2. Make béchamel: on a medium-low heat, add equal parts of butter and flour to make a roux. Add spices into the mix. Cook for about 10 seconds (do not let it brown) and slowly add milk. It will gradually thicken.
  3. If you are adding cauliflower or butternut squash for toddlers or children, it is best to add it to the béchamel and blend with a processor for a smoother consistency.
  4. Once pasta is cooked, drain and add a little butter to keep it from sticking together. Add béchamel sauce. Add cheese. Mix well and serve! If using bacon, crumble it on top like a garnish so it stays crunchy.

NOTE: If you need to reheat this, DO NOT put it in the microwave! It will ruin it and make it inedible. Instead, place it on the stove in a pot. On low heat, add a knob of butter and a bit of water into the pot. Add the pasta and slowly work it into the pasta. This will steam the pasta as opposed to zapping it.
